That technology is called the Curd Incubation Room. I’m going to explain it in detail now. My name is Siva Sethu, and I’m a cold storage expert.

The Curd Incubation Room is used in the dairy industry to prepare milk. It works similarly to a cold storage facility, but instead of just chilling, it also uses heat.

If you see this milk in a pouch or in a cup, they use a sericulture process. The milk is heated to 45–50 degrees Celsius for 4 to 5 hours. When the heat is properly transferred, the milk turns into even curd.

Because of this process, the curd you buy in stores is even, firm, and plump. This technology can handle anywhere from 1,000 to 10,000 litres of milk. The important factor is having enough space.

For example, at one site, we made a 10,000-litre cold room and built 5 additional rooms nearby. This project was done for Sudha Dairy in Bihar in 2015.

Sudha Dairy is like our village Aaveen. The machine that was installed 10 years ago is still running well. We have completed more than 30 such projects all over India.
